Blue Fish
Marinate blue fish (or other thick fish like cod, tuna
steak, shark or swordfish) in white wine, lemon juice, olive oil, capers,
tamarind paste. Put in glass pan, put in oven and let go at highest heat
for 12 minutes.
Tuna with peas and ginger
This recipe can be prepared in about 20 minutes. In a saucepan, add
3 cans of progresso tuna with their olive oil. When simmering, add one can
12 oz. tomato sauce. Add 3 tablespoons or more of ground ginger. Mix well
and let go low for 10-15 minutes. 5 minutes before serving, add can of
small peas. If the mixture is a little dry, add a little olive oil. Toss
with tubular pasta or serve alone.
Catfish
Cold olive oil in skillet; in the middle of puddle put cold tomato
sauce; in the middle put cold pesto or other green sauce. Place catfish
filets in skillet, turn on middle flame. Turn fish after 3 pr 4 minutes,
splash fish with hot garlic oil, then let go until cooked (7-8 minutes).
Catfish & green chili paste
Olive oil, add green chili paste and until sizzle; add coconut milk
(unsweetened), and pimentos. Cook fish for 12-15 minutes on low flame. In
the meantime add Cointreau.
Catfish and pistachios
Heat olive oil, add juice of one orange, and splash Cointreau. Add
catfish and coat with topping; flip fish and coat other side.Topping:
ground pistachios in mortar (1 cup), orange rind finely chopped (or food
processed). If you have topping left over after coating, add to skillet
and mix with the sauce.
Catfish and lemon pepper
Grind in food processor black pepper corns, and lemon rind (1/4
cup). Marinate catfish in hot garlic oil, lemon juice and ground black
pepper. Olive oil, place fish in skillet when oil is hot. Coat one side
with topping, turn fish, coat other side and cook mid flame.
Catfish fennel seeds, vodka
Flounder breaded
Breaded with: beaten egg, lemon juice, tamari, mint/oregano/basil
(whatever I want), sesame seeds. Flounder salsa verde
Flounder Walnut breaded
30% bread crumbs, 70% pulverized walnuts (use mortar&pestel,
not blender)100% walnuts, mashed in blender until pasty
Salmon (steamed with flavors)
)Water, thyme, lemon juice, soy sauce (tamari), white wine, to
steam salmon.
Salmon roulade with asparagus
Very laborious. One whole fillet (over 2 pounds). Surgically remove
skin. Cut salmon butterfly (along thickness to get two parts of same
thickness), open like a book, place plastic sheet over it and pund gently
without smashing. Boil asparagus spears (at least 12 medium asparagus) for
3 minutes in rolling water. Quarter asparagus lengthwise. In mortar,
pestle kosher salt and black peppers in equal quantity. Sprinkle salmon
with abundant salt/pepper powder. Cover salmon with asparagus all over the
surface. Roll salmon and wrap in wax paper and plastic paper. Let sit in
refrigerator for up to a day (few hours is OK). In mortar, crack black
pepper. Coat aluminum foil with olive oil and abundant cracked black
pepper. Remove salmon from wax paper and roll in aluminum foil, very
tight. Refrigerate. When ready to cook: grease cookie sheet with olive oil
and spices you like. Cut salmon in slices with aluminum foil on. Tie a
string around each slice. Heat cookie sheet in oven. Place salmon on
cookie sheet and cook 2 minutes at broil temperature. Turn slices and cook
2 more minutes. On the plate, serve on a bed of lettuce and a sprig of
fresh mint sprouting from center of salmon.
Salmon w/ parsley&garlic&red pepper
Chop finely garlic cloves (4 or 5), bunch of parsley, and half red
pepper. Throw in frying pan with olive oil, cook at med. temperature. Add
1/2 glass sherry or vermouth, add hot garlic oil or chili pepper paste.
When boiling, add salmon on one side for 3 minutes, turn to other side for
5 or 6 minutes.
Shrimp, steamed
Peel, vein shrimp. Steam with water containing ground lemon grass,
juice one lime, half glass white wine. Place shrimp in and let come to a
boil. Check and when pink throughout, remove.
Tuna and potato "salame"
1 can progresso tuna in oil, drain the oil. 2 mid-big potatoes,
peeled, boiled and mashed. 2 eggs. parmesan cheese, grated bread. Mix the
ingredients. Make salame-type roll. Wrap in clean cloth, knot the ends,
put in baking dish containing 2 inches water. Put in oven at 350-375 for
30 minutes. Let cool and slice.
Tuna Salad
Mix 2-3 cans progresso tuna (with oil); 1-2 cans large white beans
or chick peas; 1/2 - 1/3 cup chopped walnuts; 1-2 medium red onions
or 4-5 scallion stalks chopped; 4-5 chopped carrots, 1-2 Tbsp lemon
juice, black pepper and galic powder to taste.
Squid with tomato sauce and ground ginger
Thai Squid Salad
3 lbs. cleaned squid (sliced in rings) - place squid in a saucepan
and bring to a boil. Add slowly 1 cup of white wine - when it comes to a
boil again turn it to low and cover with a lid and low-boil for
approx. 45 minutes. Drain and let cool.
In a blender, mix juice of 2 limes, 3-4 sprigs cilantro, 1/2 tsp hot
chili paste, 4-5 Tbsp olive oil, 3 Tbsp fish sauce, 3-4 tsp ginger
paste.
Chop 2 celery stalks, 5-6 cloves garlic, (3 stalks lemon grass,)
1/2-2/3 cup cilantro leaves, 1/2 med. red onion, 1/2 tsp mint. Mix all
ingredients with squid. Pour sauce over and toss again.
Squid with artichoke hearts and basil, lime
Cut squid, fry in olive oil at med. flame for 10 minutes. Drain
most liquid, return to frying pan, med flame. Chop artichoke hearts, add
to squid, simmer 10 minutes at low-mid flame. Add chopped fresh basil. Let
go 5 to 10 minutes then add juice of 4 or 5 limes and let go 10 more
minutes.
Squid w/green curry paste, lime
Olive oil, good quantity green curry paste, squid. Let go 10
minutes, drain squid, let go 10 minutes, add lime juice, let go 20
minutes.
Squid (hot tomato sauce)
Olive oil, green of red chili paste. When sizzles, add tomato
sauce, then add cut cleaned squid. Cook covered at low flame for 20-25
minutes until very soft.Squid marinated in beerSimilar to above, but first
marinate squid in beer for 2 hrs. Lime juice can be added at the end with
10 minutes to go.
Squid lemon and cilantro-garlic
Clean squid, cut in small pieces. Olive oil in frying pan, when oil
is hot throw in the squid. High flame. Liquid will shrink. Splash in a cup
white wine. Let dry at mid low flame. Total 20 minutes so far. Then add
juice of three medium lime.Cut up half a bunch of cilantro and mince very
finely with three garlic cloves.Throw in the mix for 5 -10 more minutes
until squid is soft.
Tuna Steak marinade
1/2 cup fresh lemon juice; 1 cup lime juice; 1/2 cup tamari sauce;
2 TSP ground ginger. Marinate tuna for one hour. Olive oil hot, add tuna,
fry on both side, add some sauce. (This can be chopped in small pieced and
added to a potato salad with walnuts and pesto)
Tuna steak, lemon and tamari
Lemon juice from 4 lemons, 1/2 cup tamari in skillet. Put in tuna,
turn on mid low flame, cook tuna (turn once), until sauce becomes thick
(10/12 minutes). If tuna is ready and sauce is still liquid, remove tuna,
let sauce thicken, then pour over tuna.
Tuna and Potato Salad
Boil approx. 20 small white potatoes until almost done. Heat 1-2
Tbsp olive oil in skillet until very hot. Add potatoes and brown, add
approx.1-2 Tbsp tamari soy sauce and approx. 1-2 tsp powdered rosemary. In
a large bowl, add 2 cans of progresso tuna with its oil,. Add 4-5 stalks
chopped scallions, 1/3 cup chopped walnuts and 1/4-1/3 cup Japanese
pickeled ginger or fresh ginger and mix well. Add potatoes and combine all
ingredients until well mixed.
