Frittata

Bread crumbs, parmesan cheese, eggs, salt, pepper and whatever vegetable you want.

Mantua cake

6 oz. flour; 6 oz. sugar; 5 oz. butter; 1 whole egg; 4 egg yolks; 2 oz. total amonds and pine nuts.Mix well eggs and sugar; add flour very slowly, add ground amonds and pine nuts, then add butter (melted in double boiler). Grease cake pan with butter, sprinkle some flour. Oven 40 minutes at 300.

Braised meat
In a pot, cold, strong dry red wine, meat, chunks of carrots, celery, onion, laurel, rosemary, sage, cloves. Leave for 24 hours.Remove meat, fry in frying pan with butter and oil until it begins to brown, to seal in juices. Add the vegetable chunks and one peeled potato and SLOWLY the wine (drain the wine to remove spices. The only one you may leave in is laurel). Leave on low flame for two hours. Remove meat and slice; remove vegetables and blend. Place meat and veggy paste back in pot and let go for 1/2 hour.

 Lentil Soup

Start by sautéing onions over medium heat, and then add ginger, garlic, curry powder, and red pepper flakes and sauté a few minutes more.

 Next, stir in the tomatoes, lentils, water, coconut milk, sea salt, and freshly ground black pepper.

Simmer until the lentils are tender, about 25 minutes, and finish the soup with chopped cilantro and a hefty squeeze of lime.
