Noodles Sesame and peanut
Cook udon noodles in hot water without salt for 6/7 minutes.
Meanwhile, mix: sesame oil, peanut sauce, cilantro, sesame seeds, olive
oil, fresh ginger chops. Throw in skillet and add drained noodles right
away.
Rice salad
Rice balls (arancini) Shell:2
cups of rice cooked. Melted butter (1/2 stick). Parsley, grated cheese, 2
eggs well beaten.Filling: finely chopped cooked mushroom, mozzarella,
provolone. Make little balls around the core, bread with eggs and bread
crumbs. Deep fry then bake in oven.

(Noodle soup and beans)
Home made egg noodles. Sauté oil butter onion. Add little tomato
sauce, water or broth and fresh beans. Boil with one peeled potato 1an 1/2
hour. On the side, cook fresh pasta in broth, drain, place in glass pan
and add beans and sauce.
Fresh pasta (egg noodles)
One egg each 3 oz of flour. Mix well, add more flour if too sticky,
add some butter if too hard.
Minestrone
Celery, carrot, onion, potato, zuks, beans, green beans, peas,
asparagus, tomato, basil, sage. In cold water with salt, bullion. Let boil
low flame for hours. At the end add olive oil and puree the whole thing.
Passatelli all'uovo
Equal amounts of grated parmesan cheese and bread crumbs. Add some
nutmeg, little butter and one egg. Mix well. Boil broth, throw in the
stuff as is. As soon as it comes up it is ready to serve.
Onion soup
1 LB onion, thinly sliced; in pot with olive oil. Let go at very
low flame for 2 hours without tossing. Add broth and 1 oz. sifted flour or
arrowroot. Let go for half hour, low flame.
